
Origines, a celebration of Liège’s gastronomic heritage
With ‘Origines’, Joël Rademaker (Les Cours) offers you an authentic and refined experience with a unique concept: a contemporary restaurant halfway between a gastronomic establishment and a brasserie, with a menu that is 100% local both on the plate and in the glass, designed by Frédéric Salpetier, starred chef of the Liège restaurant Héliport Brasserie.
The restaurant is built around a vast open kitchen, named the ‘Théâtre gourmand’ for the occasion. Croquettes à la Meule du Plateau, asparagus from the Streel farm in Awans or vol-au-vent de poule mère d’Aubel with Liège-style mousseline… the entire menu showcases Liège’s gastronomic heritage, not forgetting vegetarian dishes and the house’s famous boulets pommes frites!

Open Monday to Saturday lunchtimes and Wednesday to Saturday evenings.
